Black Magic Italian Kale
Also referred to as Dinosaur Kale due to its 2foot long, prehistoric looking leaves, this is a very tasty veggie to have in the garden. The leaves of Black Magic are unlike the typical frilly kale leaves; instead they have more of a blistered appearance. With a rich and mild flavor, the tender leaves are surprisingly weather resistant, and in fact, only grow sweeter once hit by frost. Black Magic is a variety from Great Britain that has been refined over the years from an 18th century Italian heirloom variety.
Bright Lights
I cannot stop raving about this variety of chard. From its nutty, mild taste to its beautiful colours, Bright Lights is an absolute must have. Having won multiple awards, this plant is quite easy to grow, and requires minimal attention. A single crop will supply you with leaves ranging from deep bronzes to dark green, and everything in between. The foliage comes in bright red, orange, white, pink, cream, yellow, and gold. It is one of my favourite veggies to sauté up, for a lovely rainbow on your dinner plate.

Red Russian
Kale is one of the best super-foods out there, and the Red Russian is no exception! Easy to grow, kale not only provides you with about 6x more calcium than broccoli or spinach, but also has massive amounts of antioxidants, and vitamins A, C, and K!
Red Russian (once known as Ragged Jack Kale) is less frilly than most varieties, instead growing slate coloured flat, lobed leaves with red stems. The leaves are especially soft and tender when young, making them great raw and cooked. Kale is very hardy and can grow right through the winter, and the leaves on this plant gain a red colour to them in the cooler weather.

Space Hybrid
This is a lovely variety of spinach, originally from Europe. The dark green, spoon shaped leaves are slow to bolt, which gives a nice long harvest season. With its mild taste and smooth, meaty leaves, it is a good choice raw or cooked, and as baby greens or fully-grown. You can’t go wrong with Space Hybrid spinach! I even love it in my green smoothies due to its taste, consistency, and nutritional values. It’s a great way to pack a huge amount of your vitamins and minerals in!
